I love to cook, and especially love when I can make healthy food. This recipe uses tomatoes, high in the powerful antioxidant lycopene, whole wheat pasta, and odiferous, yet uber-healthy garlic and onions. It's relatively easy to make, not overly expensive, and it tastes yummy. It meets all my criteria for a fabulous weekday meal. Our dinners turn into lunch the next day for my DH, and this one travels well. All in all, a winner.
